Valentine's Day Cookies!!
I love my Sunday job more than anyone else in the world! I have the opportunity to make between 200-300 cookies from scratch each week for mass at College of the Holy Cross. I spend almost all day in the kitchen preparing for the 7pm deadline, but I wouldn't change it for anything in the world. Baking has definitely brought out the creative side of me, as I get to pick what ingredients go into the cookies!
This past weekend I made these Valentine's Day inspired cookies. They're just like chocolate covered strawberries, but in cookie form!!

CHOCOLATE COVERED STRAWBERRY COOKIE RECIPE
To make about 50 cookies, you will need:
2 sticks butter
2 cups light brown sugar
1/2 cup sugar
2 tsp vanilla
3.5 cup flour
2 tsp baking soda
1 tsp salt
freeze dried strawberries
dark chocolate chips
extra chocolate chips or chocolate wafers for melting
1. mix the butter, sugars, eggs and vanilla
2. mix the flour, soda, and salt in a separate bowl & then combine
3. add chocolate chips and (lightly) crushed dried strawberries to the dough
when the cookies are done baking, let them cool for about 20 minutes!
last but not least:
melt chocolate chips or chocolate wafers in the microwave. mix together, and drizzle on top of cookies with a spoon!!
